Why I call it as the second? Because the first trial was
totally fail. Hahahahahaha. But don’t worry because I am gonna show you the fail cinnamon roll.
Anyway, what I learn from my failure is I used the not fresh yeast. Therefore,
for this time I make sure that the instant yeast that I use is the fresh one so
it can be proved in the first step when you mix it with warm milk.
CINNAMON ROLLS
Dough :
500 gr all purpose flour
250 ml warm milk
100 gr sugar
75 gr butter
2 large eggs
1 teaspoon salt
1 package (7 gr) dry active yeast
Filling :
1 tablespoon cinnamon powder
100 gr brown sugar (I use palm sugar)
2-3 tablespoons butter
Glaze :
55 gr butter
80 gr sugar powder
60 gr cream cheese (at room temperature)
1/2 tsp vanilla
1/4 tsp salt
How to :
1. Mix yeast and warm milk in a glass then add a little sugar. Stir and wait 8 minutes until yeast is foamy.
2. In another bowl, mix flour, salt and sugar.
3. Soften butter with a fork.
4. Whisk eggs in another bowl.
5. Add ingredients number 3 and 4 into number 2, then pour foamy yeast. Mix by hand until completely blended.
6. Move the dough onto a flour dusted surface and knead for about 8 minutes. Rub the palms with a little flour so that is not sticky.
7. Put the dough into a bowl and cover with plastic. Leave in a warm place until the dough to be 2-fold (about 45 minutes).
8. Meanwhile make the filling. In a bowl stir together the palm sugar and cinnamon. Cut in the cold butter with two knives, until the mixture is crumbly.
9. The dough is divided into 2 and roll the dough into 30 cm square. Sprinkle the filling evenly over the rolled out dough.
10. Roll the dough to form a log (do not roll the dough too tightly or the centers of the rolls will pop up during baking).
11. Slice the log into 22 equal-sized pieces. Arrange rolls in a grease pan. Cover the rolls loosely with a lightly greased plastic wrap, leaving room for rolls to rise, at room temperature, until almost doubled (approximately an hour).
12. Bake in oven heated to 180 degrees Celsius for 20 minutes.
13. Meanwhile make the glaze. In a bowl, mix all ingredients with electric mixer until blended and soft.
13. Remove from oven and pour the glaze over it.
