Moist custard chocolate muffin

This is the best, softest, chocolatey (because it contains three types of chocolate inside) and my family's favourite snack. The taste is not so sweet nor the texture is not so dry. One cup of this muffin is never enough.

 
What you need : 
50 gr cornflour
6 tbsp cocoa
200 gr palm sugar
450 ml cold water
50 gr unsalted butter, cubed

100 gr margarine
250 gr dark cooking chocolate, broken small
150 ml sunflower oil
2 tsp vanilla extract
4 large eggs
75 gr caster sugar
230 gr plain flour
1/2 tsp baking powder double acting




How to : 
1. First make the custard: put the cornflour, cocoa, brown sugar and water into a saucepan and whisk together over a medium heat until boiling, very thick and smooth. 
2. Remove from the heat, beat in the butter and chocolate until melted and absorbed, then add the oil, vanilla and one of the eggs, and beat again until combined. 
3. Add the remaining egg and the caster sugar, and beat again until smooth and thick.
4. Measure the flour and baking powder into a bowl, stir together, then sift directly on to the custard and beat through until combined. 
5. Spoon into a dozen paper muffin cases sitting in the pockets of a muffin tray; heat the oven to 180C/350F/gas mark 4 and bake for 25 minutes.



Bahan-bahan :
50 gr tepung maizena
6 tbsp cocoa powder
200 gr gula palem
450 ml air
50 gr unsalted butter, halumatkan dengan garpu

100 gr margarin
250 gr dark cooking chocolate, cacah
150 ml minyak makan 
2 tsp vanilla extract
4 telur ukuran besar
75 gr gula kastor
230 gr tepung terigu
1/2 SDT baking powder double acting



Cara : 
1. Siapkan panci dan ayak tepung maizena dan cocoa powder ke dalamnya. Tambahkan air dan gula palem. Rebus sampai custard mendidih (aduk terus secara bertahap). 
2. Tambahkan butter dan margarin, aduk menggunakan spatula. 
3. Masukkan dark cooking chocolate dan minyak makan. Aduk rata.
4. Turunkan 2 butir telur ke dalam adonan. Aduk rata kemudian tambahkan sisa telur ke dalam adonan. 
5. Tambahkan gula kastor. Aduk rata. 
6. Terakhir masukkan terigu dan baking powder dengan cara diayak.  
7. Tuang ke cetakan muffin dan panggang di suhu 180 derajat C selama 25 menit.
